Pumpkin Waffles

| I used to serve these at Sunday Brunch at the doghouse, a loft in Brooklyn I used to live in. It was so great to smell these cooking on those freezing cold winter mornings. Yeah, we had no heat, but we compensated with the best vegan waffles you'll ever have. Serve with maple syrup and tempeh bacon. |

Equipment:
A Waffle iron, mixing bowls, a wisk or a strong fork
Ingredients
2 1/2 cups all purp flour
1/3 cup demerrara or brown sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ground ginger
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
2 Tablespoons soy yogurt
2 cups soymilk
15 oz pureed pumpkin, fresh or canned
1/3 cup oil
2 teaspoons vanilla
Directions
Sift together dry ingredients. In a seperate bowl, vigorously wisk together wet ingredients until well emulsified. Pour wet into dry and combine. Prepare waffles according to manufacturers instructions. I use a normal 4 waffle iron, but I've made belgian ones, too. |

At first I thought these were undercooked, and I accidently overcooked them, so they were dry. The second batch I made though, I removed as soon as my waffle iron said they were done and they were absolutely phenomenal! And my kitchen smelled terrific. |

Easy to make, yummy to eat. I'll hold out on the last soybean until I can make the waffles. We made pancakes with the batter, and they needed a loooooong time to cook before they weren't gummy on the inside. But we managed to yummy them up! |

We made these waffles for Thanksgiving Day breakfast. They were awesome with Earth Balance and pure maple syrup. It was the best way to start the day, and for us, a wonderful new Thanksgiving Day tradition. Thank you! |

i even purchased a waffle maker because i HAD to make them after i found the recipe...
i had waffles in philadelphia at this great vegan place and i've missed them ever since. :))) |

i tried this recipe and had a heck-of-a- time getting them out of the waffle iron.i oiled the pan well and thought maybe the batter was too thick so i thinned it w/ some soymilk. but they were delicious after i scraped the tops and bottoms out of the pan.just really frustrating. |

i was skeptical they would work, especaily after reading the reviews. but they turned out beautifully. didn't have any soygurt, but threw in everything else, and even with a really thick batter they made beautiful pumpkin waffles. wow. amazing. |

i am making these RIGHT NOW, and it is cold, rainy and...cold outside and these, these are fab-u-ah-lous-ness. i really like em an as i've been missin waffles too, yep everyone should try em. fo' shore!

Excellent waffles! I made these over the weekend, and they were perfect. I have never had success with vegan waffles in the past, but these didn't stick/get gummy/etc. Looking forward to trying the other other recipes. Hope there is a special waffle section in the cookbook! |

My first waffle recipe in my new waffle iron. Look no further. These are devine. SPICEY to boot. I used flax seed oil in the recipe as well as to coat the waffle iron. Instead of using individual spices, I used the combined measurements of Trader Joe's Pumpkin Spice blend. They cooked up fluffy on the inside and crisy on the outside. Lifted right out of the waffle iron. Served with Earth Balance and hot maple syrup. We will be on cloud 9 for the rest of the day. |
