Tahini Dressing

prep time: 10 minutes | cooking time: 2 minutes | makes about 2 cups
This is perfect on sammiches or salads, and nice with hummus and falafel, too. It is really important that you don't burn the garlic, you really just want to heat it and get the flavor into the oil.
Equipment:
Food processor with metal blade or blender

Ingredients
2 tablespoons + 2 teaspoons olive oil
3 cloves garlic, chopped
1/2 cup tahini
2 teaspoons balsamic vinegar
1/2 tsp salt
fresh black pepper (a couple of dashes)
juice of 1 lemon
1/2 teaspoon paprika
1/4 cup lightly packed fresh parsley
1/2 cup cold water

Directions
Heat garlic in 2 tablespoons olive oil in a small saute pan over low heat for 2 minutes, just until it's fragrant.

Add garlic and all ingredients except parsley to the food processor and blend until smooth. Add the parsley and pulse until parsley is very finely chopped but not blended in.

Refrigerate at least an hour in an airtight container.

I always wanted to make tahini dressing like the kind I have in restaurants and this is IT! My only change was that I added some water to dilute it, because the tahini I used was particularly thick. MMM. Yeah, this is IT.

I sauteed the garlic in water instead of olive oil, and then threw everything in the food processor with 3 tablespoons flaxseed [linseed] oil for omega-3 fatty acids, and it was fantastic.

absolutely delicious! I added an additional clove of garlic, being the garlic lover that I am. I always stir tahini first to mix the oil and it was a perfect consistency. I will definitely use this dressing recipe every time I make falafel.

I love this dressing! I use it on seitan shwarma wraps, and it's awesome, especially with a generous dose of hot sauce added. I also use it on veggie burgers, falafel, hummus wraps...well, pretty much everything.

YUM! I recently discovered Annies Goddess Dressing, and this is just as good!
