Banana Bread Squares

A whopping 5 bananas make this possibly the most banana-y bread ever. It's moist, simple and yummy, and makes a heck of a lot.
Equipment:
9 x 13 baking dish

Ingredients
3 cups all-purpouse flour
1 1/2 cup demererra sugar (or turbinado sugar or 3/4 white sugar 3/4 brown)
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1/8 teaspoon nutmeg (optional)

5 very ripe bananas, mashed well
1/2 cup canola oil
6 oz container vanilla soy yogurt
3/4 cup soy milk
2 teaspoons vanilla



Directions
Preheat oven to 350 F. Spray baking sheet with non-stick cooking spray.

In a large cooking bowl, sift together dry ingredients. In a seperate bowl, mix together wet ingredients. Bananas should be pretty smooth but leave a couple of lumps. Pour wet ingredients into dry and combine until dry ingredients are just moistened. Pour inot baking dish and bake for 45 minutes. Let cool a bit and cut into squares.

You know what would make these totally amazing? A streusel or crumb topping. It was totally moist and bursting with banana flavor.

Tasted good but was too doughy. I cooked it for an extra 15 minutes and it still came out with that consistancy. I wouldn't make it again.

These are so good! I cut the sugar to 1 cup, subbed medium tofu for soy yoghurt, and cooked them 15 minutes longer and they came out perfect! Isa, you're a culinary genius!

Excellent recipe! I used 4oz. strawberry soy yogurt (had it in the fridge)and upped the soymilk to 1 cup. Turned out very yummy! Noticed it seemed a bit gooey fresh from the oven, but once cooled, a nice consistency. So banana-ey! yes!

yep, this turned out super!!!!hurra hurra. my brothers, sisters and grandma and i ate about 3/4 of it it was so freaking great. then i froze the rest, and ate the rest two days later with a friend [it's even good frozen]and i think it improves a day or so after baking...also i think next time i might try walnuts or pecans or somethin...i was gonna do chocolate chips but we were out. but to sum up my rambling, make these. super super.

Made these today and they are great! I did use dairy yogurt as I had no soy yogurt (and it's Sunday and the stores are closed...). I did play with the recipe a bit too (I can't help myself). I added about 1/4 cup freshly ground flax (I didn't actually measure it, just scooped some in), and the batter seemed dry so I needed to add a bit more soy milk to the mix. I also added 1 tsp cinnamon and 1/2 tsp cloves because I didn't have any nutmeg on hand.

My only complaint is that the bottom is a bit tough, but I think that is due more to my stupid oven than the actual recipe.
