Baked Acorn Squash and Apples

I have discovered that nothing says Fall like a baked acorn squash!

I got one in my organic produce delivery and I said, "What the...!" I had never seen one! My coworker almost stole it from me as she waxed poetic about how wonderful they were and gave me her recipie. After a bit of veganizing and working with what I had on hand, I came up with this super easy and super delish recipie.
Equipment:
1 baking pan (a cookie sheet will do).

Ingredients
1 acorn squash
a little water
2 apples, cored and sliced thin.
canola oil
maple syrup
pumpkin pie spice

Directions
Preheat oven to 350.

Cut the acorn squash and scoop out the seeds and strings. Put a little water in a baking pan and place the halves face down and bake for 1/2 hour.

Then, take it out, put the sliced apples in the middle (some will fall over the sides, it's ok.) drizzle with canola oil and maple syrup, and sprinkle with pumpkin pie spice. Bake for another 1/2 hour to 40 minutes (basically, til the apples are soft and browning).

Put your acorn squash halves in individual plates and scoop up the stray apples and stray maple syrup and spoon over the squash.

This recipe is exactly like my mom made while I was growing up. Although she would add some pecans or walnuts in it. yummmm. It goes really good with brown rice and some sauteed spinach, or if you wanna be fancy, some spinach and mushroom risotto.

I make this dish every thanksgiving. it is amazing!!!! I have to say you are amazing... if you never had acorn squash, you should try this recipe

this turned out so flavorful and delicious! it is a perfect fall recipe. my mom even loved it, and she is a sworn squash-hater.
