Pumpkin Muffins

prep time: 7 minutes | cooking time: 27 - 30 minutes | makes 6 jumbo muffins
These are moist and fluffy, with a hint of molasses and warm spicy flavor. This recipes is for 6 jumbo muffins, if you want to make little muffins change the cooking time to 15-20 minutes.
Equipment:
Jumbo muffin tin

Ingredients
1 3/4 cups flour
1 1/4 cups sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/4 teaspoon allspice
1/8 teaspoon ground cloves
1 cup pureed pumpkin (fresh or from a can)
1 tablespoon soy yogurt
1/2 cup soymilk
1/2 cup vegetable oil
2 tablespoons molasses

Directions
Preheat oven to 400 F. Grease muffin tins with vegetable shortening or spray on oil.

Sift together dry ingredients (flour through cloves). In a seperate bowl, wisk together wet ingredients (pumpkin through molasses). Pour wet into dry and combine. Fill muffin tins 2/3 of the way. Bake for 27-30 minutes, till a toothpick inserted in the center comes out clean.

Perfect. I replaced the molasses with maple syrup, because I'm not crazy about molasses. They were easy and delicious.

I made regular sized muffins and they were so good my mom had one and asked if I stopped being vegan. They're really soft and fluffy.

Amazing muffins! Next time I make them, I think I will put some crystallized ginger in them. I hope you add some more baking recipes because I love them all!

The best muffins ever. i gave them to my vegi, omni, and vegan friends and they all loved them! even my mom who hates my cooking liked them.

This is the first thing I've baked since I recently turned to the darkside. These muffins are truly amazing! All I've done differently is that I substituted extra firm tofu for the yogurt. Everyone needs to spread the tasty gospel of vegan pumpkin muffins!

dang!!! these were the best, even my nonvegan family of 10 liked them...i made some variations, like whole wheat flour and a little less sugar and since i didn't have soygurt i took someones suggestion and used tofu...and they were umm umm delicious...ok i'm starting to sound obsessive so yeah this is good recipe..keep it up...

The muffins are great!!!!!! I found this recipe on another site (allrecipes.com I think) and recognized your screen name from VegPeople.com. Everyone who has tried them has asked for the recipe (and no one believes they are vegan). One question - how do you typically store them after baking. I have had a problem with the tops getting sticky and soggy after the first day of storing them in an airtight container. It is just me in the house and I like to bake one day a week to have breakfast for the rest of the week.


Try to leave them out teh first night without covering them. ~or~ Freeze them and reheat. I don't usually do that but it works with these.

I recently found out that I'm allergic to eggs & dairy & thought I was forever banned from the world of desserts till I stumbled across this website and tried your pumpkin muffins, Isa. I threw in some raisins and made some of them in the tiny muffin cups for my preschooler too. They are absolutely marvelous and I'm so grateful to you for sharing your recipe. I'm going to go look up all your other recipes and try them too!
