Sunny Corn Muffins

These are perfect sweet corn muffins, crispy outside and soft inside. They've got a great crumb, perfect for spreading on a pat of soy margarine.
Equipment:
12 muffin tins

Ingredients
1 cup flour
1 cup cornmeal
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup plus 2 tablespoons sugar
1/2 cup corn or vegetable oil
3/4 cup soymilk
2 tablespoons soy yogurt
1 teaspoon vanilla
1/4 teaspoon finely grated lemon zest

Directions
Preheat oven to 400.

In a large bowl, sift together dry ingredients (flour through sugar). In a seperate bowl, wisk together wet ingredients (oil through vanilla). Fold wet into dry, halfway through mixing add lemon zest and distribute well.

Spray muffin tins w/ non stick cooking spray. Fill each tin 2/3 full. Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean. Serve warm.

These were really good muffins! Perhaps a little sugary for my taste, but now I know I can adjust it. I think I like savory muffins so some things I might add are fresh chives, chile pepper, things like that! I made these yesterday and there is only one more left!

Absolutely fantastic! Good enough for dessert. Just made them tonight & already passed recipe on to a friend. I used maple syrup instead of sugar & vanilla soymilk.

mmmm! these were pretty tasty but a bit too sweet. i also changed the recipe up a bit by subbing white flour with whole wheat flour and i added blueberries. next time i make these i'll add way less sugar.

I tried this tonight. Reduced the sugar to 1/4 cup, added lime juice instead of vanilla extract, plus 1/3 cup chopped fresh cilantro, 1 tsp red pepper flakes, 1 Tbsp. sundried tomato paste, and sprinkled "hot & spicy salt" on top. They turned out great! Next time I think I'll throw in 1/4 cup of finely chopped jalapenos. :)

I copied down the instructions slightly wrong, and so only put in 1 tsp. baking powder...and they're still awesome. Thanks for this recipe!
