These satisfy the French Fry desire, without the frying. They taste great. My tattered magazine recipe clipping credits them to Joy Peirce of New Hampshire.
Equipment:
Nothing special

Ingredients
2 large unpeeled sweet potatoes (about 2 pounds)
1 T olive oil
1 t ground cumin
1 t ground coriander
1/4 t black pepper
Vegetable cooking spray

Directions
Clean potatoes, cut into french fry strips (1/4-inch by 1/4 inch). Combine oil, cumin, coriander, and pepper in a large mixing bowl. Add potatoes and toss well to coat. Arrange on a single layer on a baking sheet coated with vegetable cooking spray. Bake at 425degrees for 15 minutes. Flip potatoes over, and bake for another 10-15 minutes until browned.

Notes:
- Flavor is best if potatoes are well coated when tossing with oil and spices.
- When spreading the potatoes on the baking sheet their sides can touch, but its best if they don't overlap.

I would definitely make these again, the only change I'd make is I would peel them first, but that is just my preference. The spices were just right to go along with my veggie burger.

I switched the spices to cinnamon and sugar and it was awesome. Only for the extreme sweet tooth days, but defintely worth a shot.

These were really delish!! I did change the spices a bit though. I used chili powder instead of corindar and when they were done I sprinkled with cajun seasoning(I like it hot!!!) I also added 5 min. on to the cooking time. I loved these big time though. Thankya!

Yum! I made these with rubbed sage and cumin, and they were still great! Very good alone or with the traditional ketchup 'n mustard. I'll definitely be making them again!

I changed the spices a bit for these- did not have cumin so i used sage instead. They were fantastic, much better than most french fries. They were also a good soft food for after having dental work done.


Tips
To flip the potatoes quickly, start them baking on a layer of spray-coated foil on top of the spray-coated baking sheet. Use the foil to flip them over onto the baking sheet all at once.
