Cauliflower Surprise

Like so many other poor unfortunates I'd purchased a cauliflower at my local fruit & veg grocer together with a variety of other random fruits and vegetables. Cauliflower has always proven to be one of the most difficult vegetables to create an exciting dish with, I find. Well... it remained in the chiller for days when out of sheer necessity I found myself confronted with a huge white mass in the fridge that had to be used immediately! One thing led to another and POOF! an amazing thing happened.
Equipment:
* 24'inch Pot,
* Praying matt,
* Pot of pre-prepared Dahl just incase it all goes to shit.

Ingredients

1 medium sized Cauliflower
fresh Tofu
fresh sweet Pineapple
1 tsp Cummin powder
1.5 tsp corriander powder
good pinch of whole cummin seeds
5-6 garlic cloves
nob of ginger
1 tsp vege powdered stock
good pinch crushed chilli
1/2 tsp tumeric
good shaving of palm sugar
1 can coconut cream (400g)
1 can chopped tomato (400g)
oil

Directions
Combine corriander powder,cummin powder,garlic,ginger,tumeric,crushed chilli & vegi stock into mortar & pestal and grind into paste.
Break up cauliflower into florettes, cut both tofu & pineapple into bite sized pieces.
Add oil into pot, once hot add paste and whole cummin seeds and fry off. Almost immediately add cauliflower pieces. Once well coated pour in can of tomatoes & can of coconut cream.
Turn down heat to a simmer and add tofu, making sure to pocket then into the dish.
Finally add palm sugar to taste.
May be served with your favourate rice. ENJOY!!
