Oatmeal Peanut Butter Cookies

There are chewy, gooey and... I can't think of anything else that rhymes. They are peanut-y oatmeal-y good! They will feed an army so half the recipe if you need to.
Equipment:
A good ol' fashioned baking sheet

Ingredients
6 oz firm silken tofu (1/2 a package of the vacuum sealed kind)
1/2 cup unsweetened applesauce
1/2 cup canola oil
1/4 cup soymilk
1 1/2 cups peanut butter
2 cups sugar or sucanat
4 teaspoons molasses
2 teaspoon vanilla

3 cups quick cooking oats
2 cups whole wheat pastry flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon cinnamon

Directions
Prehat oven to 350

In a medium bowl, sift together whole wheat pastry flour, oats, baking soda, salt and cinnamon.

In a seperate large bowl, cream together peanut butter and sugar with a spatula until well combined, 3 - 5 minutes.

In a blender, crumble the tofu in, add applesauce, soymilk and oil. Whiz on high until completely smooth. Add this mixture to the sugar mixture and cream together until well combined. Beat in the molasses and vanilla. Fold in the oats/flour mixture.

Drop by rounded spoonfulls onto an ungreased cookie sheet. Flatten the tops by lightly pressing with a fork in a criss cross pattern. Bake for 15 minutes.

Optional: Fold 1 1/2 cups raisins or semi sweet chocolate chips (or both) into the batter

I had my doubts about making cookies with peanut butter, which I usually don't like, but these turned out to be really good--I got a lot of compliements for them. The only complaint is that it took a while to make, but it was well worth the effort anyway.

These had a great chewy texture, and were delicious the next day. No one could believe they were vegan! The next time I make these I will add peanut butter chips, and then they will be 4 star (I like my peanut butter).

I tried these things and they were great! The dough seems a little thick when you're stirring it, but I guess it's supposed to be that way, because they came out perfect!

My only problem with this recipe is that it called for soy milk in the ingredient list but never actually tells you to use it.
Other than that, I thought the cookies were delicious.
I can imagine them with a thin chocolate drizzle on top so I think I am going to make that happen next time I make them.

These cookies are great!! I added chocolate chips, which is tasty. My brother, a vegan and a cookie lover, devoured them. I have made some vegan cookie recipes that have turned out dry and leave much to be desired. These are very moist and chewy. Make them!

Wow. These cookies are fantastic! I'm not even vegan and I think they're some of the best peanut butter oatmeal cookies I've made. The recipe for me made about 5 dozen smallish cookies. My vegan friends are going to flip, I know it!

this recipe is delicious! they turned out just perfect! i was amazed because i am not the best cook in the world. these are one of the best vegan cookies i think i've made to date. sooo many of my non-vegan friends loved them. i made two batched to get rid of some other tofu i had in my frig, and wow it made it alot of cookies. but they sure did go quick. thanks for the great recipe.

Great healthy recipe. I am not 100% vegan so I was able to substitute skim milk for the soy milk and omitted the molasses because that is an item I don't usually buy and the the cookies still turned out super. This is one of the only really healthy recipes I was able to find. I really appreciate these types of recipes.

I baked these for a church fundraiser BBQ and they went like crazy! Even the non-vegans were tricked into loving them. I used lite tofu(80% less fat) on accident and was scared at what the outcome would be, but they were fantabulous!
