Carrot Apple Muffins

| I adopted this from a non-vegan recipe on Wholefoods.com, and they were the best muffins I've ever made. They're yummy, super moist, and healthy to boot! |

Equipment:
Muffin tin, 2 bowls, grater or food processor to grate carrots
Ingredients
1 1/4 cup flour (I used whole wheat pastry)
1/4 cup sugar
1 tsp cinnamon
1 tsp real vanilla extract
1/2 tsp non-aluminum baking powder
1/2 tsp salt (I actually forgot to put this in, but they turned out fine)
1 cup grated carrots (about 2 carrots)
1/2 cup unsweetened applesauce
1 banana, mushed with a fork until smooth
1/4 cup soy milk
1/4 cup oil
Directions
Preheat oven to 350. Spray muffin tin w/ cooking spray. In a large bowl, combine dry ingredients. In a seperate bowl, combine carrots, applesauce, banana, and remaining wet ingredients. Add half the wet to the dry, stir until blended, then add the rest. Spoon into muffins cups and bake about 15-20 minutes or until a toothpick inserted in the middle comes out clean. |

The taste is pretty good, and I like how healthy they are. But vegan muffins never seem to rise. |

These muffins tasted very good and rose not at all. I think next time I will either add 1/2tsp of baking soda or that plus a tiny bit of apple cider vinegar. This batter however might make reallllly kickass pancakes! |

These muffins taste great! The second batch I made I added regular baking powder and twice as much. |

These muffins are great. I used 1 tsp baking powder and 1 teaspoon of pumpkin pie spice instead of cinnamon. YUM! |

One of my friends made these for her bike club, and she shared two of them with me since she knew I was vegan. I thought they were just amazing. The texture is indescribable. I'm definitely making some of them for myself. |
