prep time: 10 minutes | cooking time: 5 minutes | makes
a German friend of mine came up with the idea of using carbonated water to make pancakes fluffy - it works amazingly!
Equipment:
frying pan

Ingredients
1 1/3 cups flour
2 tsp baking powder
1/4 tsp salt
1 cup soya milk
1/3 cup carbonated water
1 tbsp sugar
1 tbsp oil

maple syrup for topping


Directions
mix dry and liquid ingredients separately. Then combine. Fry in pan and serve with maple syrup.

note: if you want thicker pancakes, use less liquid; thinner, use more.

I've never had luck making pancakes, but this recipe was easy and delicious. My dog and my boyfriend agree ^_^ Thanks!

It's me again...I keep using this recipe and it's great. Just wanted to point out that it'll hold up to a lot of tweaks and changes--you can add spices, flavored soymilks, fruit juice, coffee or tea, even mini chocolate chips or fruit. And for anyone concerned, the oil seems to be optional. Thanks again for posting this!

I have been trying ever since I started avoiding animal products to make pancakes and I've never been satisfied. I could not BELIEVE this recipe! Tasted exactly like the old thing. I actually used Bisquick instead of flour, leavening, and sugar to make it easier and added a drop of PB. Yum!
