Macaroni Hates Cheese

| my girlfriend and i made this up a couple weeks ago for this column i have in the newspaper of a high school i don't go to. i'm not usually this blatently concieded, but this ended up being the best mac and cheese i've had in my life. |

Equipment:
medium pot, small pot, strainer, mixing spoon
Ingredients
1 box elbow macaroni
2 cloves garlic
half a fairly large sized onion
1 cup nutritional yeast
1 cup soymilk
2 tbsp. margarine
4 tbsp. tomato sauce
1 tsp wet mustard
2 pinch chopped basil
1 tsp salt
1/2 tsp pepper
oil
Directions
Throw the elbow macaroni into boiling water, following directions on the box. i like using quinoa noodles, for some extra health value. Dice the onion and garlic. Lightly cover the bottom of a small pot with oil and fry the diced onion and garlic at medium-low until onion is transparent. At this point, pour the nutritional yeast and soymilk into the pot. Add the rest of the ingredients, somewhat in the order listed above, while mixing the contents at low heat. Continue heating the sauce for a couple minutes, stirring every so often. The macaroni should be done, so strain it. Pour sauce over macaroni in a bowl. Enjoy! |

Yum! I added a little chili powder and a squirt of lemon juice.. also used fresh basil.. Sooo good! |

I made this for dinner last week because mac & cheese was one of the comfort foods that I really miss. Mark is not a vegan (or a vegetarian) and he was stunned at how delicious this turned out. Not sure it needed the basil, it could probably be omitted. Thankfully this has been added to my list of vegan comfort foods. Thank you!!! |

This recipe was enjoyable, but not transcendental. It would be nice if the recipe was updated to mention the weight of macaroni implied by "1 box". We guessed one pound and still assembled the sauce and noodles with each serving in case the proportions were wrong.
With the extra flavors added to this dish, I think it's an one an open-minded dairy eater could enjoy as well. |

Blech. Sorry guys. I am a lacto-veg, and an adventurous one at that (I eat mostly vegan, with only a little bit of cheese every week or so,) but I thought this was pasty and gross. And not an appetizing color, either. |

This was a great recipe. I made a huge amount of it for a dinner party, and it was a major success -- a bunch of non-vegans inhaled it. It's WAY better than mac and chreese (the box kind). I made it with mini shells, and you can totally save the sauce and put it over pasta later. Good job, vegan friends! |

I've finally found a recipe for my favorite comfort food, vegan style! I doubled the garlic because i do that with all recipes and it was fantastic! My husband and daughter also loved it! |

I loved this recipe!!!!!! The smell...the taste...everything! It was awesome. I have a 5-year-old that loves mac and "cheese" so this will become a regular! If you have leftovers...just re-heat in the microwave with a bit of soy butter and non-dairy milk and your set!!! |
