Asparagus risotto

prep time: 10 minutes | cooking time: 30 minutes | makes two big servings
You can either use cheap wine here, or splash out on something nice to drink along with the risotto - only one glass is used in the recipe so there's plenty left!
Equipment:
One large pot, one small milk pan

Ingredients
one onion, chopped
two cloves of garlic, chopped
1 tablespoon of olive oil
1 pint of vegetable stock
one bunch of asparagus
300g arborio rice
small glass of white wine


Directions
Cut a three inch tip from each stalk of asparagus and put aside. Cut the rest of each stalk into half-inch sections.
Fry the onion and garlic on a medium heat for five minutes or until beginning to soften, then add the small pieces if asparagus and cook for five minutes.
Add the rice and fry it for one minute, then add the glass of wine and stir it through.
Add a splash of stock, and stir until it begins to absorb into the rice.
Continue adding a little stock at a time, and keep stirring. After about 10 minutes put about half an inch of water on to boil in the small pan. When it comes to the boil, put in the asparagus tips and let them steam.
After about 20 minutes all the stock will be absorbed, the rice will be soft and your arm will be weary from stirring.
Put the rice onto plates and serve with the steamed asparagus spears on top.

I followed this recipe to the letter and it ended up coming out just a little too bland for my taste. One thing I would say in its favor, though, is that it tastes very nice and cheesy, without actually using any dairy. I'm curious to try some similar ingredients with noodles to see if I can get a little mac 'n' cheese going. So, yeah, I would recommend this, just not for anyone who likes really flavorful food. Not bad!

since the other person who commented mentioned it being a little bland
i added half a thai chili pepper to the onions and garlic.. some red pepper flakes, onion powder, and poultry seasoning and it turned out pretty amazing
