Crunch's Super Peachy Stir Fry

Equipment:
wok or other large stirfry pan

Ingredients
Sauce:

1/4 cup soy sauce
1/4 cup water
2 tbs sherry
1/4 cup sugar
1-1/2 Tbs fresh grated ginger (I get it at the store fresh, already grated in a glass jar)
2 Tbs fresh grated garlic (I get this the same way that I do the ginger)
2 Tbs. cornstarch

Veggies:

1 large onion
1 package baby bella mushrooms (or what ever you like)
1 package of tofu (if you like tofu on the more well done side then get the white wave marinated tofu, or you can just use regular..)
1 sliced ripe peach
Some snow peas, broccoli, or other crunchy green


Directions
So, mix all of the ingredients for the sauce and put it aside. Stirfry the veggies and peach and tofu in olive oil, except don't put on salt, pepper or ant other seasoning because the sauce is very flavorful. When the onions, mushrooms and tofu are basically done then add the green veggies and sauce and turn the heat down a bit and cover it till the veggies are done (like 2 minutes). I put it on top of couscous, but it is also good on rice pilaf .

It was okay. I didn't think the flavor was strong at all. Maybe if you had specified how much veggies to add to get the right taste, it would have been better...I guess I probably went a little crazy with the veggies.
