Chocolate Oatmeal Macaroons

It comes out so that the macaroons are a bit soft and stick to the plate they are served on... you have to get your fingers "dirty" to scrape them off. Everyone loves them though.

A little shomething about myself:

These macaroons were a common treat when I was growing up though they were different because my mother used white sugar and a lighter cocoa... they weren't as runny then...
Equipment:
1 bowl
1 pot
1 tray

Ingredients
2 cups sugar
1/2 cup margarine
1/2 cup soy milk
1 teaspoon vanilla
2+1/2 cup oats
1 cup coconut
8 Tablespoons cocoa

Directions
1. Boil sugar, soy milk and margarine.
2. Mix oats, coconut and cocoa in bowl.
3. Remove liquid mixture from heat and add vanilla.
4. Mix wet + dry.
5. Let cool and then spoon onto tray in little heaps.
6. Chill in fridge.

super easy and really tasty.
i let the batter sit for an hour to cool,
then rolled it into little balls which i
then coated with the coconut (unsweetened)i had leftover.
after chilling for a half hour in the fridge,
they popped right off the tray and stayed separate stored stacked in tupperware.

This is good good good, although you must have it set for more than a day. I end up eating lots of the unset macaroons anyway, because I just can't wait!!!

These cookies are freakin amazing!! You will want to eat the batter straight out of the bowl before it cools off. One comment - one cup of sugar (or maybe less!) is plenty, as is 1/3 stick of margarine/butter.

These cookies are so yummy. I used to make ones very similar all the time (they didn't have coconut). For a change I would often use a crunchy yet kind of plain cereal such as crispy rice, also adding some chopped nuts or pumpkin/sunflower seeds while making them a bit healthier taste really yummy in them. You could even use plain granola and make a granola bar-esque treat. Yum!
