Pumpkin Oatmeal Cookies

These are soft out of the oven, but as they cool they are nice and chewy. They are a serious crowd pleaser, for crowds with taste buds.

Note: I use flax seeds because they make the texture a little chewier, but I've made them without and they're still good!
Equipment:
baking sheets
2 mixing bowls

Ingredients
2 cups flour
1 1/3 cups rolled oats
1 teaspoon baking soda
3/4 teaspoon salt
1 tsp cinnamon
1/2 teaspoon nutmeg

1 2/3 cups sugar
2/3 cup canola oil
2 tablespoons molasses
1 cup canned pumpkin, or cooked pureed pumpkin
1 teaspoon vanilla
optional: 1 tablespoon ground flax seeds

1 cup walnuts, finely chopped
1/2 cup raisins

Directions
Preheat oven to 350. Have ready 2 greased baking sheets.

Mix together flour, oats, baking soda, salt and spices.

In a seperate bowl, mix together sugar, oil, molasses, pumpkin and vanilla (and flax seeds if using) until very well combined. Add dry ingredients to wet in 3 batches, folding to combine. Fold in walnuts and raisins.

Drop by tablespoons onto greased cookie sheets. They don't spread very much so they can be placed only an inch apart. Flatten the tops of the cookies with a fork or with your fingers, to press into cookie shape. Bake for 16 minutes at 350. If you are using two sheets of cookies on 2 levels of your oven, rotate the sheets halfway through for even baking. You'll have enough batter for 4 trays.

Remove from oven and get cookies onto a wire rack to cool. These taste best when they've had some time to cool and set. They taste even better the next day!

You have a lot of pumpkin pumpkin recipes on your site and they are all delicious! These added a nice twist to my school's Thanksgiving potluck, they were a hit with everyone and left the other oatmeal raisin cookies in the dust. Thank you!

How can I explain the goodness of this cookie? wow! I've given them to all my carnivorous coworkers and all were very impressed! That goes for mom, boyfriend, big brother, etc. I used milled flax seed (is this the same as ground?) and the texture was excellent. really, really good recipe!

I am very impressed with these cookies-I subbed apple sauce for the oil since I was lacking oil, threw in raisins and chopped up chocolate and subbed energ egg for the flax seeds-and a touch of maple syrup-very delicious even out of the oven! I was nervous about the pumpkin since I've only liked some pumpkin pies and that's it for pumpkin-but yum yum yum.

This cookies were fantastic! I made them for my best friend for Valentine's Day. There were so many, she shared them with everyone (even her french teacher). Everyone loved them!

i didn't want to share these with any other tastebud bearing folk...
i added mini chocolate chips since i was raisin/walnut deficient and reduced the sugar to 3/4c (plus a squirt of stevia) because i'm sugar-phobic. these coooooooooookies = very yes!

These were wonderful! I began eating vegan a few months ago, and even though I'm an excellent cook, alot of the recipes I tried were absolutely revolting. These cookies alow me to have a sweet treat that's good for me, and my family loves them. I made a small change by using spelt flour, sorghum flour, and wheat germ. (I kept the dry ingredients the same, just divided it up among the different grains.) I even used steel-cut oats one time, and they turned out great! Thank you!

Very good vegan cookie -- WTG! :)

I'm going to have to try subbing some applesauce for the oil though, to try to bring the calories per cookie down. 105 calories per cookie with 40% of the calories coming from fat is just way too much for a diabetic minded eater like me.

And who can eat just one?! :)

v. good! i made these to take to a meeting, and everyone (everyone being non-vegan) liked them lots. the texture is a lot like a traditional (non-veg.) oatmeal raisin cookie recipe i used to make, so it was like comfort food. :)
