Easy spicy chickpeas
Submitted by Meg the Brit
prep time: 15 minutes | cooking time: 1 hour | makes 2 servings
I am a fledgling English vegan and this is one of my most favourite recipes as it's so easy and has delicious, subtle sweet flavour thanks to the mango chutney. It was given to me by a very dear Pakastani friend and she only gave me vague directions re spices so just experiment!
Equipment:
Medium ovenproof saucepan

Ingredients
1 onion, finely chopped
vegetable oil for frying
1 tsp chopped garlic
1 tsp chopped ginger
turmeric
ground cumin
black pepper
1 tin of chickpeas
1 tin chopped tomatoes
a good dollop of mango chutney

Directions
1. Fry the onion, garlic, ginger, turmeric, cumin and black pepper in the oil until soft
2. Drain and wash chickpeas
3. Add to the onion, together with the chopped tomatoes, the mango chutney and more turmeric if desired
4. Bring to a simmer and place in a low oven for an hour to let the flavours develop
5. Serve with rice
6. NB peeled, chopped potatoes or other veg can be added to make a more filling dish but I prefer to keep it simple!
