Creamy Avocado Soup

I hesitate calling this recipe "my" recipe (since I first saw a variation of this in a cookbook), but I think I've done enough to it over the years to make it my own. I love avocados and I love soymilk, so I think this soup is naturally delicious and impossible to mess up.
Equipment:
mixing bowl
fork to mash avocados

Ingredients
BASIC RECIPE
2 haas avocados
2 cups soymilk or more (to desired consistency)
sea salt (to taste)
pepper (to taste)

ADD INS (according to taste and what you have available)
lemon and/or lime juice and their zest
dried cayenne pepper and/or chopped jalapeno pepper
chopped scallions and/or shallots
chopped cilantro, flat leaf parsley, basil, and/or chives
chopped red bell pepper
chopped zucchinni
shredded or finely chopped baby spinach
you get the idea...


Directions
Mash avocados in a bowl with a fork until smooth. Slowly add soymilk and mix until desired consistency is reached. If you like it creamier, add less soymilk. If you like it thinner, add more soymilk. Add salt, pepper, and any add ins that suit your tastes. A sprig of herb in the center of each serving bowl is nice. Experiment with different add ins each time you make it! Enjoy!

Note: If you use Florida Avocados (the big green ones), you will probably want to use just one avocado. This dish can be easily doubled, tripled, etc. just by adding more avocado, soymilk, and add ins.

It might sound weird, but avocado soup is the food of the gods. Absolutely gorgeous. When I make mine I sometimes use a nice vegan stock, but this one is excellent too, and I wish I hadn't read it, as I now have no more avodados in the house, and now want to make more soup!!!

Lovely recipe! However, it's unfortunate that people keep mistaking the name of the avocado as Haas. That's actually a mistake often made by ill-informed produce managers. The "Hass" cultivar came from a plant developed in the backyard of Mr. Rudolph Hass in La Habra. So set the record straight when you see it, and give the credit back to Mr. Hass on his wonderful version of the avocado!
