Submitted by Melissa Upham
prep time: 5min. | cooking time: 15min. | makes 12 small pancakes
I found this delish recipe in Vegan Planet!!! You gotta try it.
Equipment:
griddle
wire wisk or spoon
blender
knife
mixing bowl
ladle or large spoon

Ingredients
1 1/2 cups whole wheat flour
2 tablespoons raw sugar
2 teaspoons baking powder
1/2 teaspoon salt
sprinkle of cinnamon
sprinkle of allspice
1 1/4 cup vanilla soymilk
3 medium sized ripe bannannas peeled and sliced
oil or non-stick cooking spray

Directions
1. In a bowl combine all the dry junk exept bananas.
2. Next in a blender shove in half of the bananas and the soymilk and puree until smooth. Pour wet to dry and fold in unprocessed bananas.
3. Heat the griddle with the oil on there over medium heat.
Put some of the pancake batter on the griddle(4 small pancakes will fit)and cook until lots of tiny-assed bubbles start to pop. Flip the pancakes over and continue to cook until pancakes are browned. Serve with maple syrup of your fave.

I made these for a friend recently and they were great! They were my first pancakes from scratch and I was surprised at how easy it was. Yummy!

the only reason it's not full 4 soybeans is because we had to modify the recipe a bit because we didn't have allspice and we put in a little too much baking powder. But it turned out awesome anyway! Ultra tasty and in our case it cooked quicker than other pancakes.

i made these pancakes for my very non-vegan family over thanksgiving and they loved them! i always have trouble with pancakes poofing up too much and then burning on the outside while staying doughy on the inside. these, however, did not pose this problem for me. i'm planning on making them for my bf tomorrow morning. yummers.

Just made these today when I found myself w/a bunch of overripe bananas that I didn't want to waste; I used regular white flour (which is what I had on hand) for them, and they turned out GREAT! Massive kudos!

loved these! instead of mixing the bananas in the blender, i just used the slices whole in the pancakes and boy were they good!

These were really yummy! I am refraining from using white sugar right now so instead I added grade b maple syrup in place of it and added this along with the other wet ingredients in the blender. I will definately make these again. They were sweet enough for me without syrup on top but I did make sure to melt some earth balance on top.
