Wheat Free Chocolate Chip Cookies

These cookies couldn't be any easier to make, unless you had someone else make them for you. If you don't need them to be wheat free you can substitute oat flour with regular flour. You can also sub the sugars for and dry sweetener of your choice (Florida crystals, sucanat etc). Oh and by the way, they are yummylicious!
Equipment:
1 small mixing bowl
1 medium mixing bowl
wisk or fork
baking sheet or two

Ingredients
1 3/4 cups oat flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup sugar brown sugar
1/2 cup sugar
1/3 cup canola oil *or* melted margarine
1 Tablespoon flax meal
1/4 cup soy milk
1 teaspoon vanilla
3/4 cup chocolate chips


Directions
Preheat oven to 375 F.

Sift together flour, baking soda and salt.

In a small mixing bowl, whisk together flax meal and soymilk. Add sugar and stir, add oil and vanilla and whisk vigorously until all ingredients are emulsified (about a minute).

Mix wet ingredients into dry, fold in chocolate chips.

Drop batter by the tablespoon onto ungreased baking sheet, leaving and 1 1/2 inches of space inbetween cookies.

Bake for 10 -12 minutes. Remove from oven and let cool for a bit (5 minutes). Using a spatula, put them on a cooling rack or plate to cool the rest of the way.

I made this for my daughters with multiple food allergies. This is the first cookie....ever....that I have tried that actually tasted like a 'cookie'. Everyone in the house loves them. The most excellent wheat-free cookie recipe I have come across--and I have tried many!! Extremely easy to make also.

So good! I am not vegan, but these cookies are wonderful. I also highly recomend eating the dough, because it tastes just like regular cookie dough (which is delicious) but it won't make you sick! mmmmmmm

I made these yesterday and today and they were super good. I used all-purpose flour cause it was all had...My whole non-vegan family loved them, esp. my nephew...I'm going to use this as my official chocolate chip cookie recipe...next time I'll try adding some walnuts into half the batch to satisfy my mom and sister. I made these into yummy thumbprint cookies by omitting the chocolate chips, making depressions in the middle of the cookies and adding jam before baking. I also added some almond extract and ground nuts to the dough.

Keep in mind that these cookies don't spread out very much during baking. Also, I agree with another poster that you should take these cookies out of the oven even if they don't look done, otherwise they'll get too dry.

Remember, you can make your own oat flour by just whizzing rolled oats in a coffee/spice grinder (or try a blender). 1-1/4 cups rolled oats will yield 1 cup oat flour.

I have been seaching for a great wheat Free choc. chip cookie for my son for sometime and the rice flours recipes just don't cut the mustard. thank you, thank you

I've not had great success in the past with oat flour baking - these were a pleasant surprise. I replaced choc chips with a half cup each of raisins and chopped walnuts, some orange zest, and a shake each of cinnamon, nutmeg, and allspice. I didn't have ground flax seeds so I just mixed the seeds and soymilk together and blended in a food processor until the seeds were ground enough. I'll definitely make these again.
