Apple Crisp

| This apple crisp is just perfect. Sweet and crunchy and spiced just right, I like it served warm with Vanilla Bean Soy Cream. |
 |
Equipment:
9 x 13 baking dish (preferably glass)
Ingredients
For the filling
4 lbs apples (I use Roma)
1/2 cup light brown sugar
1/2 cup sugar (I use Florida Crystals)
1/2 cup apple juice or water
1 tablespoon arrowroot powder (cornstarch will work too)
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon allspice
1/8 teaspoon cloves
1/2 cup raisin (optional)
For the topping
1 cup quick cooking oats (not instant)
1 cup flour
1 cup light brown sugar
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/3 cup canola oil
3 tablespoon soy milk
1 teaspoon vanilla
1/4 teaspoon salt
Directions
Preheat oven to 350 F
Peel, core and thinly slice apples. Dissolve the arrowroot in the apple juice or water. Set aside.
Place apples and raisins in the baking dish, add sugars and spices and combine everything well (you may need to use your hands to do this). Pour arrowroot mixture over everything.
To prepare the topping, in a medium bowl, combine all dry ingredients. Add oil, soymilk, and vanilla, mix well. Crumble topping over the apples. Bake for 45 minutes.
Remove from oven and let cool at least 15 minutes before serving. |

Delicious. I used rolled oats (as opposed to quick cooking ones) and the dish came out just fine. It's great served with tofu ice cream, also great without. Excellent with coffee for breakfast. |

I used the filling recipe for a cobbler I made and it turned out wonderfully. Not too wet, juicy, and very flavorful. I tossed in some craisins I needed to use up as well and used 3 granny smith apples and one Braeburn. YUM! |

Really delicious! I used dark brown sugar, and reduced the 1/2 cup of regular sugar in the filling to just a dusting over the apples, and in the topping, I reduced the cup of brown sugar to 3/4 of a cup, and it worked well. |

This is my new favorite recipe -- I've made variations of it eight times now, and it always gets devoured in a day. It's perfect. Exactly the right amount of spice. My favorite thing about this recipe is the way it fills the house with the best smell known to man while it's baking. Mmmm. |

loved it! i reduced the sugar by about 1/2 and added a drizzle of maple syrup. plus, i used gala apples which were pretty sweet so i squeezed one lemon over them, and added the zest of that said lemon. finally, i added about 1/2 cup each of flax seeds, hulled pumpkin seeds, and unsweetened, shredded coconut to the topping. the result was fantastic! i love this site. |

i've made this a bunch of times now, and each time has been great. i bring it to potlucks and its always the first thing to go, even before the non-desert food.
i find this an easily adaptable recipe. for example:
i sub dried cranberries for raisins
i add frozen or fresh berries to the mix, coconut flakes to the filling and the topping and flax seeds are never bad on anything, so onto the topping they go.
