Coffee Cake

| So moist and with the perfect hints of cinnamon and spices, this coffee cake will make you feel all warm and fuzzy inside. |
 |
Equipment:
A couple of large bowls, 9 x 13 baking pan.
Ingredients
For the cake:
4 cups whole wheat pastry flour
1 tablespoon baking powder
1 teaspoon baking soda
1 1/2 teaspoons salt
1 1/2 teaspoons cinnamon
1/4 teaspoon allspice
1/4 cup canola oil
1/2 cup vanilla soy yogurt
1 cup pure maple syrup
1 1/2 cups plain soymilk
1 teaspoon vanilla
For the topping
1/4 cup whole wheat pastry flour
3 tablespoons brown sugar
1/4 teaspoon cinamon
1 tablespoon canola oil
1 cup chopped walnuts
Directions
Preheat oven to 350 F. Lightly grease or spray a 9x13 baking pan with non stick cooking spray.
Make the topping
Sift together flour, sugar and cinnamon. Drizzle the oil in a little at a time and mix with your finger tips until crumbs form. Add the walnuts and mix.
Make the cake
Sift together the dry ingredients in a large bowl. In a seperate bowl, vigorously wisk together the wet ingredients until well combined. Add the wet to the dry and combine.
Pour the batter into the prepared pan and sprinkle the topping over it. Bake at 350 for 45 minutes or until a toothpick or butter knife comes out clean.

aww i wish this turned out as good as everyone else's! damn! well it was pretty good, kinda dry-ish and a little heavy...but it is probaly MY fault. i didn't have ww pastry flour so i used regular white whole wheat, also i didn't have any soygurt so i used tofu and some soymilk. i guess i knew it wasn't gonna turn out when the recipe said "pour batter into pan" and i had to pat mine.
however i love all y'all's recipes so i'll probaly make this baby again, just with the RIGHT ingredients.
A better replacement for WW pastry flour would be regular white flour, regular whole wheat is just too heavy, and you found out the hard way! - Isa |

delightful!!! i added some blueberries to the batter and toasted the walnuts for the topping.the topping can be made easily by throwing all ingred. into food processor. it makes alot of cake but it doesn"t last long in our house. thank you for the great recipe isa.

I can tell this is a nice cake. However, after I'd combined all the ingredients, I was afraid the batter was way too runny, so I added another 1/2 cup of flour. I shouldn't have done that; it came out too dry. If I make this again, I will 1) stick to the 4 cups of flour, 2) toast the walnuts, and 3) quadruple the amount of topping, 'cause that's my favorite part. Overall, great recipe! Tastes better than conventional coffee cakes, even in spite of my too-much-flour mistake. |

made this as my first cake ever and it turned out perfectly! i used some slightly different peripheral ingredients just 'cos that's what i had around. hazelnuts instead of walnuts because i don't like walnuts. anyway, woo hoo! a very encouraging beginning to my new baking career. so long web design and pop music! thank you! |

this recipe was simply delightful, i made it with some friends for a bake sale and it was better than most non-vegan baked goods. it was the first thing to go at the bake sale! dee-licious! |

Maybe I'm just picky, but this was just okay for me. The texture is great, but the cake itself is a bit plain, sort of like an oatmeal cake, and the topping is super dry, even though I added more oil. It's pleasant, just not a wow. The only changes I made were using unrefined sugar instead of maple syrup, which usually makes things sweeter and I didn't have any allspice, but that shouldn't make a huge difference. It really isn't bad, but I think next time I will try adding some vegan margarine or something. |
