Banana Bread

A simple, no frills banana bread. Perfect for, um, eating. I recently edited the amount of sugar needed, so this should be perfect now.
Equipment:
8 x 4 bread pan

Ingredients
1/2 cup brown sugar
1/2 cups white sugar
1/2 cup margarine, at room temp
3 very ripe bananas, mashed well
2 cups flour
1/2 teaspoon baking soda
1/4 cup vanilla soy milk, mixed with 1 teaspoon apple cider vinegar
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon allspice
1/2 teaspoon salt

Directions
Preheat oven to 350 F. Spray a 8x4 bread pan with non stick cooking spray, or lightly coat with margarine.

Sift together flour, baking soda, salt and spices.

Cream together the margarine and sugars. Add bananas, soy milk and vanilla.

Add the wet ingredients to the dry. Mix well. Pour batter into pan. Bake for an hour to an hour 10 minutes.

use all the ingredients in the banana breads submitted by Isa.then delete all margerine except for 1 tbsp.add 2-3 tbsps semi sweet chocolate chips.i also subsituted 3/4 cup whole wheat flour for some of the white flour.This version will be lower in fat and have some fiber.

i've noticed that Isa's bread becomes all carmelized on the outside-this is so delicious!
these vegan recipes are wonderful.especially great even if you use eggs in your diet,but run out...
Thanks for teh tip! Yes I've been doing the low fat thing myself lately. Maybe add some applesauce if the margarine is eliminated? -Isa

this was my first attempt at a ppk recipe and i'm happy to report that it all went swimmingly! i did cut back the margerine and added 1/4 cup of applesauce instead. good call. and in addition to the dark chocolate chunks i added about 1/4 cup chopped, toasted peacans which took this loaf over the proverbial edge.

it garnered praise from my sister, girlfriend, and even my stubbornly carnivorous parents. thanks ppk!

Don't get me wrong, I love this. It tastes great and I recommend everyone try it at least once.

Just one thing tho'.......the levels of sugar in it. After making this and sampling it on baking I ate about a third of it. I spent the next two hours running around like the Great Cornholio on the mother of all sugar rushes........ The effect was so stong that my father thought I was on something a damn site "naughtier" than banana bread.

That stops it getting 4/4, but it does taste divine!!!!!

You're right, it's a lot of sugar. I make this usually for a junk foody mood or if I want to pull one over on relatives. I bet the sugar can be cut in half and have it still taste good. -Isa

I made this at home everyone loved it! My die-hard meat-loving brother spent the whole weekend ranting and raving about how good it was, and how he could not believe that it was vegan. I had to make it twice to shut him up. Thanks!

THis recipe is AWESOME! I definately cut back on sugar (adding about 1/3 cup total) and margarine (I used 1 pad) and it worked out beautifully! I also added chocolate chips and cranberries which were very tasty. I highly reccomend this recipe to anyone looking for some super banana bread!

yum! this banana bread rules. it's the best i've ever made (vegan or otherwise!). i made it straight up with no nuts or chocolate chips or anything. it's really moist and i like the way the outside gets just a bit crunchy too.

I just made this a few minutes ago. It is incredible! I substituted spelt flour and didn't have any vinegar, and it came out perfectly! My house has smelled delicious for the last hour!

oh my god, this was the best bread i've ever had in my life. and i am a bread queen. seriously, i almost ate the whole loaf in one sitting before my friend said i should save some for her. suggestion: if you like walnuts, sprinkle some on the top before sticking the dough in the oven. yummy and pretty too.
