French Lentil Soup w/ Tarragon and Thyme

| Tarragon adds a wonderful peppery, licorice flavor that compliments this soup like nobody's business. If you've got fresh herbs on hand, by all means use them, just triple the amount. |

Equipment:
Large soup pot
Cold winter's day
Ingredients
2 cups french lentils
2 teaspoons olive oil
1 large white onion, diced medium
1 large carrot, peeld and diced small
5 plum tomatoes, diced
4 cloves garlic, minced
2 teaspoons dried tarragon
1 teaspoon dried thyme
1 teaspoon paprika (hungarian if you've got it)
2 bay leaves
1 1/2 teaspoons salt
A couple of generous dashes fresh black pepper
6 cups water all together + 2 veggie bullions or 6 cups veggie broth
Directions
First a note about the water, when I add it at first I just add 4 cups, and then towards the end I add another 2. Just don't want you to miss that and add it all at once.
Heat olive oil in the soup pot. Add carrots and onions and cook about 10 minutes over med-high heat, until onions are browning and even a little burnt. Add the garlic , herbs and spices (except bay leaves), saute 2 minutes. Add the tomatoes and a little spash of water if neccesary and stir to deglaze the pot. Cover and cook for 5 minutes.
Add salt, 4 cups of water and bullions or veg broth and cover to bring to a boil. Add the lentils and bay leaves and cover again. Simmer about 45 minutes until lentils are almost totally tender. Add 2 more cups of water, cover and bring to a boil again, about 15 more minutes. If it looks to thin, uncover and simmer for a couple of minutes. If it looks too thick, add a little more water. Serve with good crusty bread.

I will never need another Lentil soup recipe. Perfect in every way, and I've never cooked wiht tarragon before, it's delish! |

WOW! i think this is the best soup i ever made!! thanks so much for the great recipes. this soup is so good - me & my roommate had it for dinner last nite but it's even better fo lunch right now. i want to buy ur dvd but i just checked my available balance and it's $6.02 - BOOOOOO! i will save up & in the meantime pass along recipes & recommend your site. I made this last year as an alternative for my vegan self at my families anual bacon clam chowder christmas eve dinner. I was nice enough to share, and it was a hit! Guests were asking for the recipe, and this year they were asking if I was going to make it again. |

Absolutely delicious, hearty soup, perfect for a cold day. I used a 28oz can of diced tomatoes(including all the liquid), and it turned out beautifully. |

I done this recipe twice already and both times it came out great. However, the first time, I did not have any tarragon so I used one teaspoon cumin and two whole cloves. I also could not use broth/buillion (since I am gluten intolerant) so I threw in two stalks of minced celery and two dashes of rosemary leaves with the 6 cups of water.
Overall, both recipes were delicious -- even without the tarragon and broth.

Love this recipe very good .... I am a tarragon, anise freak and to bring out this flavor and a little more French feel to the soup I added a couple of tblspoons of Pernod . Excellent |

Just sent review and didn"t notice the soybean rating and left it at the default of .5 which is not at all accurate I give it 4-5 soybeans |

I loved it as is, but the family wasn't keen on the lentils. SO..I used it as a base for a chuncky veggie/alaphabet soup. Yum!!! |
