(I know this is posted in the wrong spot, but I wanted to reply because I have a good recipe for this.)
Hi! Chicken a la king was my husband's favorite, too, and I use this
recipe with the following subs to make it vegan:
- Earth Balance (or oil) for the butter and vegan "chicken" broth (obvious)
- Soy curls rehydrated in "chicken" broth, squeezed dry and browned a little for the chicken
- Cashew cream for the creme fraiche (vegan sour cream also works in a pinch)
- Add peas (but that's just me)
It's really, really good! I think it's a little different than some people's a la king (I see a lot of recipes using bell pepper?), but I'd say if you have a good omni recipe and use the soy curl and cashew cream subs you'd be golden.
