Smoked Almond Gravy
Makes 2 cups

I always sit on the couch and eat way too many smoked almonds. I was looking for a way to parlay that activity into brunch, and I found it in smoked almond gravy. This is one of those times where I think “Thank god I thought of this!” instead of “I wish I had thought of that!” Really rich, smoky gravy that is just perfect with biscuits. Not to mention it only uses a handful of ingredients and takes a handful of minutes. Smoked almonds are available in most supermarkets these days. Serve with Herb Whole Wheat Drop Biscuits.
2 cloves garlic
1 cup smoked almonds
1 1/4 cups water
2 tablespoons soy sauce
2 tablespoons corn starch
Chop up garlic in a food processor or blender. Add the almonds and process into fine crumbs. Add the remaining ingredients and process until relatively smooth.
Transfer to a sauce pot over medium heat. Stir often until thickened, about 5 minutes. That’s it!

That sounds amazing. I gonna start looking for smoked almonds. I wonder if one could use regular (unsmoked) almonds and replace the water with strong lapsang souchong tea? Maybe add more soy sauce? Hmm…

Angie…I wouldn’t want to do that but I can’t stop you! I think lapsang souchong would taste like sewer water as a gravy.

how about some smoked salt or liquid smoke added to regular roasted almonds if you don’t have access to smoked almonds?

Sure, that would work! But where do you guys live that there are no smoked almonds? They usually have them at any convenience store/gas station/truck stop as well as supermarkets.

No smoked almonds here in Belgium, I’m afraid… I never even heard of such a thing. And over here one can’t buy liquid smoke either (aaargh!). Our supermarket used to have smoked salt for a short period of time (I luckily still have some left), and last summer in Sweden I found hickory smoke bbq-sauce (& chipotle sauce, which they don’t sell here either), so for the time being I can manage to make wonderful tempeh bacon & the like, but that won’t last for ever. Can anyone recommend a good online store where they sell stuff like that?
I bought my copy of vegan brunch on amazon.co.uk this morning, so I guess I’ll be the happy owner of it in only a couple of days

i don’t know if this will help but try looking up “salish” on the wide wide world of web. i bought smoked salt that i unfortunately decanted so i don’t remember the brand or country in question. anyway, the story was that salish is the european name for smoked salt. norway sweden or someplace near there to be somewhat exact. i hope that helps.

Well, almond gravy would work too. Use some dried herbs like thyme and sage. Won’t be smoky, but will be good!

Well, you could smoke the almonds yourself, which makes it a more involved recipe, but would probably be super awesome.

Made it tonight and TREMENDOUS!!! Would be excellent over mashed potatoes. And so much easier (and healthier) than a roux-based gravy.

Wonderful - enjoying it over homefries with a baked pear. Literally, would probably be good on anything you can imagine gravy being good on. I could even imagine putting on on sandwiches with seitan chicken.

I’ve never come across smoked almonds here either (Australia). As far as using regular almond goes & adding some liquid smoke… I don’t see why it wouldn’t work, but even liquid smoke is difficult to get here! The ONLY place I’ve seen it available is www.usafoods.com.au - a business that specifically imports American foods.
Man… what is it with Americans and giving everything a smoky flavour?! I can’t stand it - reminds me of the smell of my hair the day after getting pissed at a bonfire party!!!!

I actually saw the recipe in your book before I saw it here–made an adaptation of this the other night (not allowed smoked almonds on my restrictive diet)–I added 1/2 tsp smoked paprika to home-toasted, raw almonds. IT WAS STELLAR! I had never tasted biscuits with gravy before, so that’s what I used it on. . . I went a little crazy putting that gravy on everything for the next couple of days! Fabulous recipe; thanks so much!
