Merci Beaucookie!

When we do favors we do them out of the kindness of our heart and shouldn’t really expect much in return, but wouldn’t a thank you be so much more heartfelt if you could eat it? Cookies show that you really mean it. Mean it enough to spend a half hour in the kitchen whipping up a batch.

I’ve been trying to make it a point to thank people more often, which means baking more often. This week I had two people to thank but I didn’t really have anything fancy to pack the cookies in. Yes, a plastic baggy full of cookies is a wonderful gift, but I wanted something a little more impressive. Turns out that empty tea boxes are the perfect vehicle for cookies and they’re the kind of thing everyone has around the house. And if they’re not empty, pull out a couple of bags and voila!

To make them even cuter, and also to provide a little padding, line the bottom with a few extra tea packets that you think will go well with the cookies. Here I’ve chosen some cranberry tea to go with cranberry white chocolate cookies. You can’t see them because they’re hidden but I promise they are there! You can use the inside of the box as your card. This one was for the guy at the bike shop that put my seat on after it had been stolen. He also put on my lights, which is very cool because usually trying to figure out those light straps ends with me and a roll of duct tape and a lot of cursing. But the reason I really wanted to thank him was that if you’ve ever been an idiot in a bike shop, you’ll notice that the employees pretty much treat you like an idiot in a bike shop. But this guy was really nice about it, so he gets cookies!

On this, the first evening of VeganMoFo, how about figuring out who you could thank? Even if it’s for some silly reason. Hint: No one has ever baked me cookies!

Mexican Hot Chocolate Snickerdoodles

OK so I am getting back into the video world with a very appropriate, prim and proper little video about cookies! Mexican Hot Chocolate Snickerdoodles, to be exact. And I blather on about the Aztecs and autumn a bit in the video so I won’t overdo it here. But let me just say that they are one of my absolute favorites in the book, you probably already have all the ingredients, and I hope you make them!

Mexican Hot Chocolate SnickerdoodlesMakes 2 dozen Cookies

A beautiful crackle topped chocolate cookie with a spicy cayenne kick and a sugary cinnamon coating. Sold?

For the topping:
1/3 cup sugar
1 teaspoon ground cinnamon

For the cookies:
1/2 cup canola oil
1 cup sugar
1/4 cup pure maple syrup
3 tablespoons almond milk (Or your preferred non-dairy milk)
1 teaspoon vanilla extract
1 teaspoon chocolate extract (or more vanilla extract if you have no chocolate)
1 2/3 cups flour
1/2 cup unsweetened cocoa powder

1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon cayenne

Preheat oven to 350 F. Line 2 large baking sheets with parchment paper.

Mix the topping ingredients together on a flat plate. Set aside.

In a medium mixing bowl, use a fork to vigorously mix together oil,  sugar, syrup, and milk. Mix in extracts.

Sift in remaining ingredients, stirring as you add them. Once all ingredients are added mix until you’ve got a pliable dough.

Roll dough into walnut sized balls. Pat into the sugar topping to flatten into roughly 2 inch discs. Transfer to baking sheet, sugar side up, at least 2 inches apart (they do spread). This should be easy as the the bottom of the cookies should just stick to your fingers so you can just flip them over onto the baking sheet.  Bake for 10 to 12 minutes, they should be a bit spread and crackly on top. Remove from oven and let cool for 5 minutes, then transfer to a cooling rack to cool completely.

Pignoli Almond Cookies

The cookie book is off to the printers and we are thoroughly excited about sharing a few more recipes with you. For those who were at the Toronto Veggie Food Fair, did you catch Terry and her cooking/baking demos? Here she is kissing our book cover at the Book Expo this past summer.

 Pignoli Almond Cookies

Makes 2 dozen

You may simply knows these are “pignoli,” the rice almond buttery cookie with the dense, chewy center and a smattering of pine nuts. I’ve been missing Brooklyn a lot lately, especially around autumn, and these cookies are an Italian (and Jewish) bakery staple. The bakeries in Brooklyn are a little bit different from the kind of hoity toity 4-dollar-cookie bakery we find across the country these days. For one thing, you could buy cookies by the pound. And for another, the cases were overflowing. It wasn’t about buying one cookie to nibble on while you pretended to work on your lap top. It was buying a box, tied up with red string, to bring and share where ever you were going. It wasn’t a birthday party (or a funeral) if it didn’t end with a big cardboard box of colorful, chewy, chunky, crispy, crumbly cookies.

Pingolis were a staple in that box. If you know what I’m talking about you’re probably already in the kitchen unwrapping your almond paste. If you don’t, well, try these heavenly bites and join us.

Note: These cookies are super-soft right out of the oven, so be sure to allow them a full five minutes to firm up on the cookie sheet before transferring to racks to complete cooling.

7 ounces almond paste, sliced into 1 inch cubes (not marzipan)

Pinch of salt

1/2 teaspoon baking powder

2/3 cup sugar

1/2 cup Earth Balance margarine, softened

1/2 teaspoon almond extract

1 cup all purpose flour

1/2  cup pine nuts

2 to 3 tablespoons almond milk for dipping

Preheat oven to 325°F. Line a medium sized baking sheet with parchment paper.

Pulse almond paste, salt, baking powder and 1/3 cup sugar in a food processor until mixture is crumbly, about 1 minute.

In a large bowl cream together margarine and remaining 1/3 cup sugar with an electric mixer until pale and fluffy, about 3 minutes. Add almond paste mixture and almond extract and beat until fluffy, about 2 minutes. Sift in flour and beat until a slightly crumbly yet soft dough forms. Dough should form a soft mass when pressed together.

Pour pine nuts into a shallow bowl and pour 2 Tablespoons of almond milk into a small saucer. For each cookie, roll 1 tablespoon of dough in palms to form into a ball, dip one end in almond milk and press moistened end into pine nuts. If necessary press pine nuts into surface of ball. Place dough balls, pine nut side up, on baking sheet at least 2 inches apart. Bake for 14 minutes until cookies have puffed and spread a little, and nuts are are just slightly toasted. Remove from oven and allow to cool on baking sheet for 5 minutes to firm up before carefully transferring to cooling rack. Store in a tightly covered container.

NYC Mega Super Gigasmic Round Up Post Woo Woo

I’ve been staying at my mom’s little exposed brick studio on the Upper East Side which means a tiny dormitory fridge that opens the wrong way and a Holly Hobby stove wherein your butt is touching the counter behind you when you try to cook. All of this translates to very little cooking and lots of dining out. And since I’m a visitor in your fair city it also means that I’m often not footing the bill. And that means Candle 79 twice a day. Just kidding. Kind of. But when you have to share a futon with your mom don’t you kind of deserve it?

 It’s stupid to get the hummus at a fancy restaurant, but I can’t resist the smoky hummus at Candle 79. You can’t beat smearing roasted garlic on grilled flatbread. Color me stupid.

This is Candle Cafe, not Candle 79. And it took every ounce of willpower not to order the Cajun Seitan Sandwich. Instead I went the wholesome 80s healthfood route with the make your own plate option. Grilled tempeh, buckwheat soba, aduki beans and steamed greens with two sauces. It hit the spot. (PS I actually took my friend out on this one, so I’m not THAT much of a cheapskate.)

This was Hangawi. I’d never been because for some reason, removing your shoes in a restaurant seems so high maintenance. I love their sister spot, Franchia, but the food here was pretty lackluster. I even heeded my friend’s advice and made sure to order only items with the spicy icon. This was the Spicy Mongolian Hot Pot. Neither spicy nor Mongolian nor…well it was in a hot pot.

My agent took this pic, and I like the pic. I didn’t like that the Pear Delight (or something) was nothing but a sliced Asian Pear. No joke! It was 7 bucks, and sliced in a really cool way, but not a 7 dollar way.  I would definitely return to Hangawi for the beautiful atmosphere, but I’ll order the surefire avocado bibimbap.

This was the surprise hit of my trip. From Gobo (the uptown locale), Grilled Oyster Mushrooms and Asparagus. Perfectly seasoned and charred. I’m all over it. 

The Benedict at Counter. A creamy sauce over a mushroom sauce over scrambled tofu over an English muffin. Not too shabby! (But mine is better.)

Chocolate Hazelnut ice cream at Stogo. Oh, and hot fudge sauce! The hand model is one Terry Hope Romero. The ice cream is simply sublime.

And of course some cheap eats at Food Swings. This is my MO: Steal some of my friend Amy’s hot wings and mac, order a chicken caesar for myself. No one gets hurt. And yay for Food Swings new ownership - a bathroom and non-disposable plates! PS Amy update your goddam blog! 

But it hasn’t been all mooching.  We also gave away some cookies and bookies at Book Expo America.

San Francisco And Magical Coconut Bars

 I’m heading to San Francisco this weekend! So all you Bay Area people better hide your tempeh and get to your favorite restaurants early, lest I eat everything. I’m planning on hitting up Millenium, Cafe Gratitude (say what you will, their tiramisu rocks yours), Cha Ya, Udupi Palace and Amici Pizza, which is apparently serving Cheezly pizzas with no extra vegan cheese charge. How swell! (I don’t think I’ve ever used “swell” in a sentence, but it’s the only thing that fit.) I hope to come home with plenty of food porn, but for now feast your eyes on another recipe from the upcoming Vegan Cookies book.

Magical Coconut Cookie Bars
makes 24 very rich little bars

As the song from Xanadu (the movie) goes…you got to believe we are magic, and nothing will stand in our (and your) way once you taste this unapologetically vegany version of the stuff childhood dreams are made of.  Here are the nutty, chocolately, ultra-sweet and buttery-tasting graham-crackery coconut bars you loved so much as a kid. If your childhood was lacking in them, well then these are tastier than therapy for sure. The vegan secret weapon of choice here is cooked-down coconut milk, bringing in even bigger coconut flavor than ever imagined. The ever-elusive vegan butterscotch chip, should you ever have some, makes a sublime addition too.

These bars require a good overnight chilling to really firm them up before slicing, so plan accordingly.

Tip: You’ll want to use only sweetened, fluffy white flaked coconut for these. Save the natural shredded stuff for a healthy curry.

Tip: Press the graham cracker crumb crust like crazy into the pan; the more you pat it down the firmer the resulting crust will be.

One 14 oz can (regular or lite) coconut milk (about 1 3/4 cups)
2/3 cup dark brown sugar
2 cups vegan graham cracker crumbs
1/2 cup melted margarine
2 tablespoons sugar
1 1/2 cups chocolate chips or chocolate chunks
2 cups flaked, sweetened coconut
1 cup walnuts or pecans, chopped

In a large saucepan whisk together coconut milk and brown sugar over medium high heat. Bring to a boil, reduce heat to low and simmer for 10 minutes, stirring occasionally. Mixture may form a thin skin on the surface; just stir it back into the liquid. Remove from heat and let cool while preparing the crust.

Preheat oven to 350°F. Line a 13 x 9 x 2 inch baking pan with parchment paper. In a large bowl combine graham cracker crumbs, melted margarine and sugar; mix well to moisten crumbs completely. Firmly press mixture into prepared pan, pressing evenly from center to sides of pan.

Pour warm coconut milk mixture evenly over crumb base. Top with an even layer of chocolate chips, flaked coconut and nuts, in that order. Firmly pat everything down until coconut milk mixture soaks upward into the toppings. Bake for 28-30 minutes or until coconut is deeply golden and filling is bubbling, remove from oven and let entire pan cool on a wire rack for 15 minutes. Transfer pan to the refrigerator to completely cool and firm up for at least 4 hours, even better overnight or until very firm. Use a sharp, heavy knife to run along the edges of bars, slide bars on parchment paper out of pan onto a cutting board then to slice into 24 squares. Store in a covered container in the refrigerator. These also freeze well, tightly wrapped and allowed to thaw for 20 minutes before serving.

Peanut Butter Chocolate Pillows

First off, I caved and joined twitter. So if you want to know what spices I am running low on, today is your lucky day. OK, now I’ll make with the cookies.

It seems that Peanut Butter Pillows won this battle, but the war still rages and I’ll post a few more of your recipe requests in the next few weeks. Right now, though, let’s get down to business. This recipe come straight from the ska checkered oven mitted hands of Terry Hope Romero.

Chocolate and peanut butter fans will totally stalk you once they get a bite of these classic chocolately cookies with a heart of sweet and salty peanut butter. We can’t deny impatience is rewarded here: these cookies when eaten warm just a few minutes out of the oven are dynamite. We use black cocoa powder because we happen to have it, but dutch processed or even regular cocoa powder would be A-OK.

Peanut Butter Chocolate Pillows
makes 2 dozen cookies

Chocolate dough:

1/2 cup canola oil

1 cup sugar

1/4 cup pure maple syrup

3 tablespoons non-dairy milk

1/2 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/3 cup unsweetened dutch processed cocoa powder

2 tablespoons black unsweetened cocoa or more dutch processed unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

Filling:

3/4 cup natural salted peanut butter, crunchy or creamy style

2/3 cup confectioner’s sugar

2 to 3 tablespoons soy creamer or non-dairy milk

1/4 teaspoon vanilla extract

In a large mixing bowl combine oil, sugar, maple syrup, non-dairy milk and vanilla extract and mix until smooth. Sift in flour, cocoa powder, black cocoa if using, baking soda and salt. Mix to form a moist dough.

Make the filling. In another mixing bowl beat together peanut butter, confectioner’s sugar, 2 tablespoons of soy creamer and vanilla extract to form a moist but firm dough. If peanut butter dough is too dry (as different natural peanut butters have different moisture content), stir in remaining tablespoon of non-dairy milk. If dough is too wet knead in a little extra powdered sugar.

Preheat oven to 350°F. Line bakings sheet with parchment paper.

Shape the cookies. Create the centers of the cookies by rolling the peanut butter dough into 24 balls. Scoop a generous tablespoon of chocolate dough, flatten into a disc and place a peanut butter ball in the center. Fold the sides of the chocolate dough up and around the peanut butter center and roll the chocolate ball into an smooth ball between your palms. Place on a sheet of waxed paper and repeat with remaining doughs. If desired gently flatten cookies a little, but this is not necessary.

Place dough balls on lined baking sheets about 2 inches apart and bake for 10 minutes. Remove sheet from oven and let cookies for 5 minutes before moving to a wire rack to complete cooling. Store cookies in tightly covered container. If desired warm cookies in a microwave for 10 to 12 seconds before serving.

So I’m back in Portland, just in time for the tail end of the rainy season. What better time to bake cookies? Terry stayed with me for over a week and we got some much needed foodie time. We took lots of pictures for the cookie book and even got to make a few new recipes together. Reunited and it felt so good.

Now I am just kind of settling in and letting life get back to normal. I have a bit of a cold so it’s been mostly soup, cats and tea for me, but I hope to get back to blogging regularly again in the coming weeks. For now, I’ll share some cookie pics and you guys can let me know what you would most like the recipe for. And don’t say all of them! The Ghost of Gingerbread Past

Gingerbread from back in the day

What a difference 4 years makes. When Terry and I made these Gingerbread Punks for a lost episode of Post Punk Kitchen, we seemed to have all the time in the world to mix colors, make leopard spots and paint on fishnets. And, apparently, we didn’t know how to turn off the flash on our camera. My kitchen was so tiny we had to roll the cookies out on the coffee table and balance bowls of neon icing in precarious ways; sometimes on a stack of books, sometimes on a cat - we made do. When I was moving to Portland I actually found one of these cookies in the back of one of my cabinets.

Now we’re 3,000 miles apart, we have dishwashers and counterspace and I can barely muster up a couple of dots for my little gingerbread bread eyes. But whether you’re going all out or part of the gingerbread minimalist movement, this recipe is a surefire winner that will have you singing Christmas carols under your breath and then looking around to make sure no one heard you.

Modern minimalist gingerbread guys

Gingerbread Cut-Out Cookies
Makes about 16 cookies (depending on the size of your cutters)

1/3 cup canola oil
3/4 cup sugar
1/4 cup molasses
1/4 cup plain soymilk

2 cups whole wheat pastry flour or all-purpose flour (or a mix of both)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt

spice blend:
1/2 teaspoon each ground nutmeg, cloves and cinnamon
1 1/2 teaspoons ground ginger

Directions
In a large bowl whisk together oil and sugar for about 3 minutes. Add molasses and soymilk. The molasses and soymilk won’t really blend with the oil but that’s ok.

Sift in all of the other dry ingredients, mixing about half way through. When all of the dry ingredients are added, mix until a stiff dough is formed. Flatten the dough into a disk, wrap in plastic wrap and chill for an hour or up to 3 days in advance. If you chill longer than an hour you may want to let it sit for 10 minutes to warm up a bit before proceeding.
Preheat oven to 350 F. Lightly grease your cookie sheets or line with parchment paper.

On a lightly floured surface roll the dough out to a little less than 1/4 inch thick. Cut out your shapes with your cookie cutters and use a thin spatula to gently place on cookie sheets. If you are using them to decorate a tree or something, remember to punch a hole in their heads (!) before baking. Bake for 8 minutes.

Remove from oven and let them cool for 2 minutes on the baking sheet then move to a cooling rack. Wait until they are completely cool before icing.

Chocolate Chip Cookies

Milk & Cookies. It’s like they have to have the ampersand to connect them, writing out a-n-d would just ruin everything.

I don’t know that there is a more comforting snack. Not like best friend died, global warming, McCain is president comfort; but just like early evening, fluffy slippers, had sort of a non-descript day, gonna watch dvds kind of comfort. But I feel like an idiot even talking about chocolate chip cookies, it’s not like they’re a hard sell.

Despite evidence to the contrary, I don’t love to use Earth Balance when I bake. I’ve been working on my Earth Balance-free dream chocolate chip cookie recipe for longer than I want to admit. They’re crinkly on the top, a little crispy on the bottom and soft in the center. And for milk make mine almond, unsweetened, thanks. As an added bonus, you just need one bowl for mixing. Great for those of you in the no dishwasher set.

Chocolate Chip Cookies
Makes two dozen two inch cookies or about 16 three inch cookies

1/2 brown sugar
1/4 white sugar
2/3 cup canola oil
1/4 cup unsweetened almond milk (or your favorite non-dairy milk)
1 tablespoon tapioca flour
2 teaspoons pure vanilla extract

1 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt

3/4 cups chocolate chips

Preheat oven to 350 F. Lightly grease two large light metal baking sheets.

Mix together sugars, oil, milk and tapioca flour in a mixing bowl. Use a strong fork and mix really well, for about 2 minutes, until it resembles smooth caramel. There is a chemical reaction when sugar and oil collide, so it’s important that you don’t get lazy about that step. Mix in the vanilla.

Add 1 cup of the flour, the baking soda and salt. Mix until well incorporated. Mix in the rest of the flour. Fold in the chocolate chips. The dough will be a little stuff so use your hands to really work them in.

For 3 inch cookies, roll the dough into about ping pong ball size balls. Flatten them out in your hands to about 2 1/2 inches. They will spread just a bit. Place on a baking sheet and bake for about 8 minutes - no more than 9 - until they are just a little browned around the edges. I usually get 16 out of these so I do two rounds of eight cookies. Let cool on the baking sheet for about 5 minutes then transfer to a cooling rack.

For 2 dozen two inch cookies roll dough into walnut sized balls and flatten to about 1 1/2 inches and bake for only six minutes.

2008 Is Starting Off Famously

It’s been a few weeks, so let me dip my toes back into the blogging world with the best sort of not-safe-for-work cookie disaster from Garrick, who’s also working on a vegan cookie book. You know, I’m just going to post them. If your boss fires you for looking at accidentally vagina-shaped cookies then it’s not the kind of job you want anyways.

They were supposed to be Sweeney Todd cookies, as Garrick explains on the PPK forums.

“They were supposed to look like slit flesh, as in Sweeney Todd, he slits the throats of victims… I didn’t know marzipan would expand in the oven.

In other news, Terry and I will be on NPR’s Weekend Edition tomorrow morning at 8:30 in NYC. I’m not sure what time or channel for other cities. And I’ll be posting some exciting news about mineses and Terry’ses upcoming projects.
