Sushi Cupcake
Deidre Jean posted this about a week ago and ever since I’ve been thinking “I have to post it on the blog, I have to post it on the blog.” And whenever I nag myself with something I refuse to do it. But now that I’ve stopped nagging myself I can freely post it on the blog.
“This ‘japanese style’ cupcake is the basic yellow cake from Vegan Cupcakes Take Over the World with the “butter cream” frosting, both flavored with coconut extract. The ‘rice’ is coconut, the ‘fish’ are swedish, the ‘wasabi’ is marzipan, and don’t eat the plastic grass.”

Isa,
Thank you for posting my picture here! I am so thrilled that you liked my variation. When I was posting it, I was worried that the concept was “not vegan”. You know, because it’s fishes.
At any rate, I made it for my friend Andrew’s birthday. He just got married and his wife is Japanese- so this is my Japanese themed cupcake.
Hugs, Dee

Also–any idea of where to buy the plastic grass? The only thing I could think of is swiping it from Japanese restaurants when my friends eat sushi, but that’s not quite feasible…

I bought the grass at a japanese store. I’ve also seen it at large asian grocery stores.

It was my birthday yesterday and I had VCTOTW on my wishlist. Well, hubby came through and I can’t wait to bake up a batch!

My fiance just suggested some kind of thin sauce, like espresso or something, in lieu of soy sauce.
