Vegan Cupcakes Take Over The World
Since I’m not on the internet enough I thought it would be cool if I created a blog dedicated to vegan cupcakes. That’s a joke, see, because I am always on the internet, watching, waiting and keeping things vegan. But I thought it was necessary to create a safe space for all things vegan and cupcake.
Our little cupcake book is out so tell your local store to order it for you, but I can’t stop you from going to Amazon, either.
The cover was designed by one Josh Hooten from Herbivore magazine, the forward was written by Sara from Tegan and Sara, photography was done by Rebecca Bent and the cupcakes were tested by a full team of internet famous sublebrities. Terry and I love you all! (Except for Josh) You may also notice that the book is dedicated to Bea Arthur.
Tomorrow I will start the blog off with pictures of a cupcake tower from my friend Abby’s wedding. After that, who knows? But keep checking back so that you can say you knew us when.

Happiness is a warm cupcake. Or maybe a room temperature cupcake. But so long as it’s a cupcake, a vegan cupcake, we can all be happy. Good work Eesie.

It’s alive!
I want to say something like everyone that has supported us is like the frosting, and without that we’re only naked cupcakes, of muffins, but that’s too much mental imagery.
’nuff said, bring on the cupcakes.

I put this book on my wishlist so someone will get it for me for my birthday next month! I have been eagerly awaiting this book like nobody’s business. I truly hope it takes over the world!

Just got the book yesterday, and I can’t decide what to make first! After literally months of waiting for this book to come out (drooling over all the photos from your lucky lucky testers) I’m overwhelmed. It’s an absolutely beautiful book too - just great to look at and read. Good job!

Wel I just received my book yesterday so today was the day to start making these gorgeous things.
Well my first atempt was the margarita cupcakes. I followed the recipe exactly and even brought them out of the oven when tested with a knife they were done. Then they all sank…what a shame. So not one to be deterred I made the basic chocolate cupcakes.
They rose so well and they have a nice domed top. They are still warm so I dare not frost them yet. In the meantime I made another batch of maragitas. Left them in the oven for longer, they seemed okay quite firm to the touch but ultimately sank when I took them out of the oven and are really doughy in texture.
Any help would be appreciated.

In my experience, all vegan cakes are a bit doughy and heavy(that’s not to say that I don’t like them). I made the lowfat vanilla cupcakes and they turned out quite good, though I will agree they are a bit more like muffins than cupcakes. Hon, it can’t all be the same as with eggs and milk!
