I'm on a beet kick
You're welcome for not making a beat/beet pun. In anticipation of fall I've been cooking with beets a lot. I didn't truly learn to appreciate this root until a few years ago and then I had to wonder what my problem had been before.
My two latest creations are beet cakes, sort of like potato pancakes but with beets, carrots and sweet potatoes. And tonight I invented Gazborscht. It's either an earthy take on gazpacho or a piquant take on borscht. Feast your eyes.
